The yeast they make these days doesn't always need to be proofed. The rapid or quick variety (I haven't read the label in ages, just grab the package I always use) can be mixed directly into the flour. It saves some time and bother. If you think your yeast might be old then proofing it is a good idea, to be sure it is still active. No point in wasting the rest of your ingredients if your yeast is dead.
