Are there any potluck dinners in your area (for music club, church, whatever)? You can use salsa in a casserole and get rid of a lot of it at a time that way. It's also good mixed in with chicken soup for something slightly different. My mother likes it on rice. Lots of uses for salsa beyond the obvious.
