Then there's the "middle of winter what do I have in the kitchen" salsa -- canned black beans, canned (rinsed) or frozen corn, lots of onions, decent tomatoes if you can get them or no sodium canned chunks, celantra, preserved lime juice, maybe some jalapenos.
