I have a folklorist friend who's working on the topic... as mentioned in the above-cited article, apparently "oyster suppers" were huge in the 19th century, with Chesapeake Bay oysters being shipped all over the country. Those of you still eating 'em are indulging in a true folk tradition -- passed down through a few generations, now.
