Not only was it the easiest request but I completely stuffed up my answer. You wanted the chords? Here they are (my interpretation):

Bill Sullivan's Polka

F#m D | A D | A D | A F#m |
F#m D | A F#m | A Bm | F#m / :|

Britches Full of Stitches

The / indicates a repeat of the previously named chord.

The :| indicates that you repeat the tune (and all chords) either back to the start of the piece OR the previous occurrence of |:

I think you'll find with both pieces (but particularly Britches), that the actual chord arrangements could vary quite considerably. If you are playing with a BASS player you'll need to work through this to get agreement, but the above will work just fine.
