You can get USB or Firewire preamps which will take a mic or guitar jack, convert it to digital and spew the results into any audio recorder program. Generally they're around $100 or so (or £100 in the UK - yes we get screwed over on this kind of stuff). Cheaper ones just do one or the other; slightly more expensive ones will do both.
