Have you done a mail shot of local pubs? The Wheatsheaf in High Street didnt know what had hit them! What about all the pubs that run sessions already?

Why not try a few restaurants to run sessions too? eg Darwin Centre. Also do a session under the Old Market Hall.

Perhaps the river boat will be back - session up and down river.

Could still use Band stand in Quarry. Just a thought.
