George, I'm interested to see that you don't do that faffing around with salt on your aubergines.
I was always taught to do that, until one day I thought "Why?" and stopped salting them before cooking, and noticed no adverse effect on the taste and realised that it made cooking with them a darned sight easier. It does seem to be an English affectation, this salting malarkey.
