Time for an Easter Dinner thread for 2007. What do you all plan on cooking?

Last year my plans went awry because I fell ill. All I managed was a spicy carrot souffle. The Ham wound up being carved into several other dinners.

This year I plan on making:
Lemon & Thyme Roast Stuffed chicken (BIG chicken!)
Saffron rice with dried cranberries & almonds
Brussel sprouts with pancetta and Ritz Cracker crumbs (very buttery crackers, yum)
More of that Parmesan Carrot Souffle from last year (it worked out so well)
Southern style greens with pickle juice
(sounds awful but taste great, you steam up some collard, kale and mustard greens, toss them with some garlic/dill or sweet pickle juice)
Stilton & Walnut scones
Cheddar biscuits (american style biscuits)

for Dessert:
Peach-Blueberry Fool
and
Twinkimasu (Tiramisu made with twinkies, don't knock until you've tried it)
