Are any folk songs written with a particular instrument in mind? Surely you can play whatever you like on piano. As has been said before, it depends what you're looking for.

I'm a hopeless pianist but get lots of pleasure from the Eleanor Franklin Pike series of traditional songs (op 20) which are very easy arrangements but you I guess you can feel free to add such complication as you wish to suit your playing level.
