I know exactly what Ian is saying. In fact it is a good bet he has a Seagull with a Cedar top. My favorite guitar EVER (including my Larrivee and mid 60's Guild 12) was a Seagul S6 with a cedar top. Admittedly I treated it like it was a $12,000 collectible, with annual trips to the luthier to keep the action right, humidity control, etc. But every year that guitar just got sweeter and sweeter. The sound was mellow, yet it carried itself right well in a group. I don't know how to describe it, other than to say that when you strummed it, you got a warm feeling in your tummy. Liam's Brother (Dan Milner) borrowed it for a song in Boston one time. When he gave it back he said, "Mick, where did you get that?". I can't speak for all Seagulls, but if I am recommending on the basis of my experience, I would say they are the best buy for the buck out there.
