Re: xanthan gum and tamarind

The xanthan gum I purchased came from Bob's Red Mill. Go to the site and search under storefinder for stores with these products. (Copy and paste sites below.)

Also, go to Whole Foods online. http://www.wholefoodsmarket.com

There is a succinct Wiki article about Tamarind at http://en.wikipedia.org/wiki/Tamarind

It is my understanding that the tamarind is a tree whose fruit and/or roots are used for Worcestershire sauce and Pickapeppa sauce, as well as fish sauce, drink and candy ingredients.

My middle-aged librarian mind remembers finding it in a liquid concentrate in a jar originating from the fruit, as well as a frozen and more solid state originating from the roots at a Whole Foods store. I used the liquid in the jar. Regretfully, the jar is gone; therefore, I do not have label information.
