Brown good pork sausage and good onions in a skillet. Pour off any grease or add some butter if needed -- you need about 3 tablespoons of melted fat of some kind.

Stir in 3 tablespoons of flour, making a roux of the grease, sausage, and onions. Now pour in 2 cups of warm milk. Stir until it's gravy-thick and serve it (with a little salt and lots of freshly ground pepper) on biscuits. (You can also use good thick-sliced bread.)

Don't use hot, spicy sausage.
