FYI - I had a bad headache last nite when I was adding that last instruction on the banana Corckpot Cake and I got it arse-backwards.
I didn't mix the pudding in the crock - I beat it in a bowl and then poured the pudding sauce stuff in first. THEN, you put the very thick cake batter in. I even got away with using defrosted year old egg-whites from the freezer! Some recipes are sooooo forgiving.
I would guess that you could do a version of the Banana Cream Upside Down Cake as a Coconut Cream Upside Down Cake. Just use a coconut flavored Cake mix. Instead of banana puree (which acts as the fat), you could use 1/2 cup coconut milk mixed with 1/2 cup vanilla yogurt. Instead of the banana Instant pudding, you could use Coconut instant pudding. When you dish it out, sprinkle some toasted coconut on top and viola! Coconut Creme Upside Down Cake from a Crockpot.
LTS - ever since reading your post, whenever I stub my toe, drop something or do something stupid, I now shout: "Oh Cake in a Crockpot!"
