Most string companies describe the characteristics of their various string sets on their websites. GHS used to have a chart on the back of their packaging that had a "brite-warm" rating for their acoustic string sets as you described. Don't know if they still do.
Re excessive brightness have you tried silk and steel or silk and bronze? They're a bit more mellow and sound good on some instruments. D'Addarrio flatops are also a bit warmer and are easy to play.
I'm a Newtone PB Masterclass fan but am happy with D'Addario PB which keep for a long time in their sealed packaging and also John Pearse PB which don't in their more conventional packaging.
