I am a Cakewalk fan but I am far more interested in the sequencing aspects of MIDI than the notation aspects. For what you apear to require, Noteworthy will do a better job than Cakewalk for a lot less money.

I can not comment on the higher end notation software like Finale and don't know what benefits they offer but my advice would be to download Noteworthy (it is shareware) and see if it meets your requirements.
