The "normal" banana bread recipe calls for three bananas, but I like it more cake-like, so I use five bananas (four if they are very large).

5 bananas, mashed
2 eggs, lightly beaten
3/4 cup sugar
1 1/2 cup white flour
1/2 cup whole wheat flour
1 teaspoon soda
1 teaspoon salt
1-2 tablespoon melted butter
walnuts or pecans optional, at least 1/2 cup

pre-heat oven to 350 degrees (U.S.)

Mash bananas, mix in eggs. Mix dry ingredients and add to bananas, stir in butter as you mix it all. Mix in nuts, or arrange on top of batter.

Pour into greased regular-sized bread loaf pan (or smaller pans and reduce the baking time according to size). Bake 65 minutes (at least) and test for doneness by inserting toothpick into the middle.

If you're not using all of the bananas, mash them so they're easy to use (I mash five at a time) and freeze them. Make a note on the container if you do an odd number so you can supplement the frozen fruit when you get ready to use it. If you wanted to make this recipe with your bananas, I suggest you divide them into containers of 4 1/3 bananas each, make a loaf from one batch and freeze the other two batches.
