like CarolC & Joybell, I peel & freeze ripe/over-ripe bananas & have been doing it for decades.

I can remember when our local fruit market was GIVING AWAY lots of very over-ripe bananas & most of the takers were older migrant women who knew what a treasure they were cos they how to use them. Other folks were turning up their noses at the sight of these black & brown bananas, we were gathering them up into bags & staggering off under our loads. YUM!

I used to have a great banana cake recipe, which froze well & was yummy when heated, tho also great eaten straight out of the freezer!

When I ate cooked porridge I would just cut the frozen banana into the pan & cook them together, now I eat muuesli, I just remove a banana from the freezer when starting brekkie preparations, and cut it up into my muesli when I'm ready to serve it. I also do the same when I'm making a banana smoothie. YUM
