Also remember and beware that the coming so-called Summer months are upon us, and these establishments really do have to work hard on their chips as , generally, only new potatoes are available and they don't fry/go brown in the same way as old potatoes.
They can be quite pale but they're absolutely fine to eat.
If eaten in paper, also ask for a few scraps - they add (apart from calories )something to the taste of the new potatoes.
