Knives- I have a Henckels bread knife, probably not as good as a Wusthof, but is works well. As gnu says, never let water near it.

I have a couple of old high-carbon steel knives that see a sharpening steel, but are never washed, only wiped with a damp cloth. They are hard to find since most people like their knives bright and shiny. One was a lucky find at a thrift store.
