As folks have mentioned, Audacity is available for Mac. I still haven't figured out the interface, though, so I use SndSampler. It's the most annoying nagware on the planet if you haven't paid for it, but once you buy the shareware, it's very useful and I find the interface for basic functions easier to understand.
