Cous cous pizza: tried it on Wednesday and it's bloody lovely!
300 g cous cous - you can use the pre-packaged, pre-spiced stuff available (Ainsley Harriot does a good line of this in the UK) 2 eggs 30g grated cheese (about an ounce) your favourite pizza toppings.
Make up the cous cous per instructions on the packet or as you normally do it. Beat the eggs and mix with the cous cous. Spread out on a plate or a 7" round cake pan and microwave for 5-7 mins until firm.
Meanwhile, using 'Fry Light' (cooking fat in a a spray can), cook your favourite pizza toppings. Obviously, the lower fat ingredients you use, the lower fat content of the whole pizza, so red onion, mushrooms, courgette (zucchini) and peppers are good.
Put the veggies on top of the cooked base, sprinkle the cheese over that and whizz it under a hot grill for a few minutes if you like your cheese really melted and golden. Otherwise, the heat of the base should melt it.
It's really scrummy and great for those who don't like tomato or are on a regime that excludes processed flour.
