Take the loins and slice them very thin and treat them as Veal Scallopini. Do a roast as you would Peking Duck......the orange flavor is excellent. We call it Peking Buck. Also cook in dry white wine with a rosemary and mint rub. Known here as Lambi Bambi. And of course you make the classic Sloppy Joe mix with ground deer which is very lean and serve up Sloppy Doe.
