Mine (not NE, but whatever)
Roast in a heavy dutch oven with tight lid.
put a layer of celery stalks and whole carrots on the
bottom and lay roast on it. Pepper, garlic cloves, slow roast
and it will fall a apart tender when done. Toss the celery out,
slice the carrots if you want them, but the veggies are mainly
for the added flavor to the drippings for gravy making when the
roast is done.
