They started that "labelling" here a while back. I pay no attention to it. Especially their classes of steak. Personally, I can take nearly any cut of steak (I ofetn buy roasts and cut steaks... Many times, I have bought certain cuts of steaks and used it for stew beef as it was cheaper and better then the "stew beef") and cook it the way I want, no matter whether it says grilling or simmering or whatever. I think it's all to do with heat and time.
