Well, I did a search on that method, and people do swing chickens around their heads to kill them. Swinging apparently snaps the neck, which kills the chicken. I would imagine that bleeding the dead chicken after the neck is snapped would be no more difficult than bleeding any other animal after its been killed.

So I see no reason to doubt what I was told about how my grandmother butchered her chickens.
