There are some excellent books on smoking meat. A few of them: "Home Book of Smoke Cooking, Meat, Fish & Game" by Jack Sleight & Raymond Hull: "Smoke and Spice" by Cheryl Alters Jamison and Bill Jamison; Dr. BBQ's Big-Time Barbecue Cookbook," by Ray Lampe.

All of these, with the possible exception of the first one listed, would be available from Amazon.Com Lots of recipes for brisket, sausage, different cuts of beef, pork, fowl, and fish.

Hope that helps. I have an electric Masterbuilt Smoker and use it a lot. Primarily brisket, ribs, chicken, and turkey.
