I live near the American River in Northern California, a major salmon spawning site and a great place for salmon fishing. Smoking salmon is almost as popular sport here, as catching it. I had a neighbor in Sacramento who used to keep me supplied, so I never had the need to learn how to catch and smoke it myself. Then he got divorced and moved away, and I've been without a good supply for a long time.

But I became an expert at eating it - it goes great with beer.
