Yes, Bert, oily fish. I don't smoke white fish unless I have lots.

Michael, I always make arrangement that the food juices DON'T drip into the sawdust, because that spoils the smoke taste, for me. Tastes burned, rather than smoked.

Fir and pine often taste too resinous. Not all of them, though.
