Perhaps the "folk" category was dropped because, unlike other categories, what's meant by the term is culturally derived. As a global concern, iTunes needs a set of categories whose meanings don't change from one culture to another. Rock is rock and blues is blues, regardless of one's culture, but what may be homegrown folk music in one culture may be esoteric "world music" in another.
