Exporting the data won't be a problem.

Right click on a table and select "Export."
In the "Save as type" dropdown select "Text Files..."
This will open the Text Export Wizard.
Select "Delimited", Next
Select "Comma", Next
Select "Finish"

Unfortunately you cannot export Queries, Forms, Reports, Web Pages, Macros, and Modules as such.
If, for example, you export a query you will export the data returned by the query.
Depending upon where the data will eventually reside you can save the query's SQL code.

I don't think Access will be disappearing any time soon.
MS will be including it in their Office 2010 suite.
