I think that song was sung on the Late Late Show one night (back in Gay Byrne's time) - as far as I recall it was a member of The Voice Squad who was asked to stand up in the audience and sing it...

"I would pluck her a snowdrop,
one blooming Irish snowdrop..."

Something like that anyway - I do remember she rejected the carnations anyway...
