All ironing done. 2 loads of wash.

NO GO area cleared. Unit arrived a few minutes ago. Soon will start assembly.

BOXING DAY PIE

Ingredients
Leftover Quorn Roast or Turkey cut into cubes or thin strips
Parsnips & potatoes cut into small chunks
Leftover veg e.g. peas and carrots
Leftover gravy (vegetarian or turkey)
Leftover stuffing (meatless only)
Melted butter
Roast Chestnuts (optional)

1. Toss all the ingredients except the stuffing, butter and chestnuts
together in a baking dish. Make certain there is enough gravy to
make the sauce for the pie; this will help keep the underside of the
stuffing top moist.
2. Crumble the leftover stuffing over the top then drizzle the butter over the stuffing.
3. Bake at 180°C to 190°C until heated through and stuffing goes
crunchy and golden.
4. Serve with a few freshly roasted chestnuts and any leftover
cranberry or mint sauce.

The beauty of this dish is that you can prepare steps 1 & 2 when cleaning up on Christmas Day and it can be kept in the fridge for Boxing Day.
