It might be in the walls or in the sub-floor. Maybe somebody doused the place in ammonia trying to get rid of an animal pee smell.

Of course, ammonia is one thing I've heard of people using to get rid of bees, and if it smells like ammonia AND honey, maybe that's what it is.
