I'm not a big tofu fan, and hate the mess it makes in the skillet when used in stir-frys, but my son and I like to marinate tofu and then bake it in the oven. There are a number of different marinade recipes around. I usually make a marinade from olive oil, tamari, lemon juice, garlic, thinly sliced green onions, a little cooking sherry or red wine, and a little honey. Alternately, I will cut way back on the tamari, use sherry, white wine or cooking rice wine and oil, scallions or green onions and freshly grated ginger, and eliminate the honey. Cut the tofu into 1/2 inch slices. Marinate for 1/2 to 1 hour in the frig, then bake in a 350 oven until heated through - 20-25 minutes.   You can add a little cornstarch to the marinade just before putting the dish in the oven, or pour off some of the marinade into a skillet to thicken with cornstarch to serve as a sauce over the tofu and rice.
