Thought I'd posted this earlier, but must have gotten sidetracked...
I was looking for something else and came on an article from NPR last year with some really yummy looking vegie recipes for Thanksgiving: click for
- Mushroom And Spinach Galette - Baked Pumpkin With Root Vegetable Stew - Stuffed Acorn Squash - Vegetarian Gravy
When I was vegetarian and living with those who were willing to be so with me, I used to make Russian Vegetable Pie, from the Vegetarian Epicure, for Thanksgiving: A crust made with cream cheese in it, a cream cheese layer spread on the bottom, a layer of sliced hard-boiled eggs, cabbage sauteed with onion and herbs, topped with sauteed mushrooms (and a top crust). My sister made it once with a layer of sliced beets, too. Very wintery. Used to do all that sauteeing with just butter, now I cut it with some olive oil. Not a low-calorie dish.
