I think Quorn is available in US, but is fairly new there? So might be harder to source.

I mentioned it above too, but I forgot that it isn't however Vegan, as Eggs (albeit free-range ones) are used to make it. So it might be off the menu..

Spleens 'Sag Paneer' above, is a great Indian dish, very worthwhile trying that. Paneer has a good firm texture and holds together (instead of melting like most cheeses) when cooked.

Greek Halloumi is fantastic for holding it's shape when griddled, fried or BBQ'd too.
