I'm kind of partial to "The Last Of Garnet's Homemade Beer." ("Garnet" in this case being Garnet Rogers, I assume.)

It's the kind of parody that plays on the words of the original (in this case "Barret's Privateers") but is not a parody of the story or concept of the original.

Another good one of that sort is "The Idaho Spud."
