The classic Earl Scruggs tune in which he retunes the strings as an ear catching device is the one I mentioned earlier, "Flint Hill Special." He actually developed some hardware mounted on his peghead for retuning on the fly. Now there are more sophisticated tuners available for accomplishing the same thing.
