You've got your quotes wrong. Douglas Adams said:

"Beethoven tells you what it's like to be Beethoven and Mozart tells you what it's like to be human. Bach tells you what it's like to be the universe." which is quite a different thing from being infinite.

Carl Sagan never said that about Bach, indeed Bach is the most represented artist on the Voyager Golden Record
