Years (and years) ago, I used to make a 100% whole wheat yeast bread that had a high rise and a remarkably light texture. It was a sponge recipe. It got lost during the years we lived in a tent and travel trailer. Thought it was either from Beatrice Trum Hunter or out of the "Laurel's Kitchen Bread Book," but no joy. Have also tried googling recipes and do not find anything that might be it. Now I'm wondering if it might have been a Walnut Acres recipe. I still have most of my recipe sheets from Walnut Acres, but possibly not all.
Anyhoo, if you have a good recipe for a 100% whole wheat bread that is relatively light with a good rise, please share it.
