I have tuna maybe 2-3 times per month; peanut butter maybe once a month. I sometimes will add tofu to whatever, but I really have to keep the protein low, anyway. I tend to get most of my protein from almond milk, Ezekiel bread, cereals like Shredded Wheat or Grape-nuts (no sugar, no salt:-), a small amount of shredded cheese for meatless tacos. There is a little bit of protein in almost everything, even corn tortilla shells with no fat, so it adds up more quickly that one might think.

Your Maymester sounds intense.:-)
