Fish will spoil really fast and taste bad if not absolutely fresh. What I do and pretty much every serious fisherman does is immediately dispatch the fish with a blow to the head, clean it, and place it on a stringer in the water. Creeks are very cold and will keep them perfect. If they are dispatched and carried around they will get strong and will taste fishy. No one should attempt to keep it alive by any means that is cruel. Immediately dispatch the fish. I let everything go except for a couple that I will keep for someone. I myself don't like the taste of pretty much any fish except Friday fish fry of haddock.   Smoked salmon is ok but again everyone raves over my smoked salmon but I don't really get too excited over it either. I am a meat and potatoes guy I guess. With this fish I got two boneless fillets about 2+ pounds each. Very pink very beautiful fish. I will give it to my old uncle who has been bugging me all season hence I kept it. I would love to keep them and send them to catters, the last batch I sent out cost 62 dollars to overnight so I really can't do that - I sure wish I could.
