Dave, you're eating unripe fruit if they're Cavendish bananas that aren't yellow - they are perfect when they have the brown "sugar spots." But they don't work as well for ocarinas.

The plantain bananas (plantanos) are a firmer more vegetable-like banana and probably would work yellow as well as green. And they need to be cooked before you eat them.
