Sorta like head cheese, but chopped up better. Someone had this brand of sliced head cheese - might have been Oscar Meyer - where they put chunks of things in and sliced the stuff after. It gave me the impression of being like a nice lab-ready cross section. Of course it also made me think about what I was eating. "What part of an animal is round and puckered like that...?" (It was probably just a nose, but I wasn't taking chances.)
