Finally I get around to it. That silver polish can be rivetting stuff.
Herring Salad
This is a "cold table" dish, typically served with smørrebrød.
6-8 ounces (by weight) pickled herring, drained and sliced 1 cup diced cold boiled potato 1 cup diced pickled beets 1/2 cup diced peeled apple 1/3 cup diced onion 1 teaspoon Dijon mustard 1 teaspoon sugar 1 tablespoon vinegar 1 cup thick white sauce, or 2/3 cup heavy cream, whipped Pepper and salt Chopped parsley 1 or 2 hard-boiled eggs, sliced
Mix the herring, potato, beets, apple and onion in a fairly large bowl. In a small bowl, mix the Dijon mustard, sugar and vinegar into the white sauce or whipped cream, and gently blend it into the herring mixture. Season the whole thing with salt and pepper. Finally turn the salad into a pretty dish and top it with slices of boiled egg, and a thorough sprinkle of chopped parsley.
If you can find salt herring, substitute a whole one (two fillets) for the pickled herring. Soak the fillets overnight before making the salad.
