There was a thread a while back about how to do a potroast... can't recall the name. Kendall and many others contributed.

Here, a potroast is often not done in a pot. It's done in a roaster (covered roasting pan) and it's a roast accompanied under, alongside and over by various veggies, cooked slowly at 225 to 250F for hours.
