Like you we don't deep fry very much. When we have chips - very occasionally - we have a chip pan - not Teflon.
With regard to heat the latest pans have a red small circle in the centre of the pan that tells you when the pan is hot enough to use.....not sure if it tells you if it is too hot...we tell that if the oil smokes.
