"I would be much less fond of my iron cookware if I did not have a gas stove..."
Well, I would not worry about trying some cast iron cookware because you own an electric stove. I find that the gas stoves I have owned make "hot spots" in most cookware, including cast iron, and the settings are more difficult to "get right"
With the electric stoves, you simply turn the knob to a setting you know works and it will work again. The low setting for cooking rice was always difficult to find on a gas stove. Sometimes the fire would go out before it was low enough not to burn the rice. The electric range works like a champ every time.
