Yes, those "flat" keys are usually chosen to make it easier for the Bb clarinet player in particular. (The other instrument we hear is a Bb trombone. The traditional Bb trumpet is missing here, i.e. replaced by Emmett's "yodelling".) Banjo players had/have to be used to those keys – they have fewer strings to cover than guitarists.
On the guitar, Eb will be D with capo 1. If you have no wind instruments to worry about (or modern professionals who own an A clarinet as well), transpose the song to suit your voice and your guitar technique, e.g. to ordinary D major.
